Why I Started Cooking?
As a personal chef in Napa County, California, I remember my childhood fondly with memories of my mother in the kitchen. She would always ask us what we wanted for lunch or dinner, and depending on our answer, she would ask my father to go shopping for the necessary ingredients. We would sometimes tag along to grandma's farmhouse to pick fresh produce like squash, turnips, carrots, okra, and more.
My father loved strong flavors and would always add chili peppers, onions, garlic, and tomatoes to his meals, which my mother roasted in the oven or over an open fire with olive oil. My sister and I would dare each other to taste them, and sometimes we would run around the yard like hens, shouting for water. My father was always one step ahead and gave us milk instead.

POP-UPS PIZZA
Authentic Neapolitan Pizza
Baked in only 90 seconds Neapolitan pizza is not just a delicious treat, but a beautiful sight to see. This iconic pizza which originated in Naples, Italy is made of dough made with only flour, water, salt and yeast. The dough is easily stretched by hand, it is soft and effortlessly extendable. Once baked it will be beautifully framed with a thick but airy CORDONE marked by the typically charred leopard markings on the outer crust. There are countless ways to making pizza dough and baking it in a wood-fired oven. At The Gastro Kitchen, we will be working with a 66% hydrated dough which is how it is made in Naples. These dough balls have rested for at least 24 to 40 hours in the refrigerator. Let's get started.
